Most restaurants ask for an hour or two. Zén Singapore, a three Michelin starred restaurant and a proud member of the Frantzén Group from Sweden, asks for an evening, and it earns it. That is the thing worth understanding before you book. This is not a meal you fit into a schedule. It is one you give yourself over to.
The restaurant, holding three Michelin stars in the current Michelin Guide, reopened in August 2026 after a three-month refurbishment. What follows is my sense of how the evening unfolds, act by act, showcasing the best of Nordic cuisine with Japanese influences.
Act I: The Ground Floor Counter Experience at Zén Singapore

You begin on the ground floor, at a new 16-seat chef’s counter with an open kitchen. Seven canapés open the meal, prepared and passed to you directly by the chefs standing a few feet away. This intimate setting is a hallmark of fine dining at Zén Singapore, where the presentation and quality of each dish shine through.
What that closeness changes is subtle but real. Seeing the kitchen work removes the usual wall between diners and cook. You are not simply being served; you are, in a small way, part of the cooking process. The anticipation builds naturally here, one delicious bite at a time. Act II: The Second Floor Dining Room and the Main Courses

The second floor is where the main courses land, and where the Zén menu reveals its Nordic cuisine roots with clear Japanese influences.
The Shima Aji Crudo is a considered start, restrained at first, before the acidity arrives and shifts its character entirely. The Chawanmushi is the quiet high point for me: a delicate steamed egg lifted by abalone and a savory beef broth, comfort and precision in the same spoonful.
Then comes the Wagyu, paired with oxtail pressé and fermented Kampot pepper. It is the fullest, deepest dish of the evening, and it shows the kitchen’s whole vocabulary in one plate. The room itself is darker now, warmer, timber-lined, with individual table lamps drawing your attention down to the food.
Look out for the recurring signature French Toast Grande Tradition, a tour de force of fried sourdough, cheese custard, aged balsamic, and white truffles, a dish that regulars quietly hope to see on the dinner menu.
Act III: The Third Floor Lounge and Desserts

Dessert is not simply the sweet course here. You move upstairs to a third floor lounge, and the whole mood softens. Desserts, petits fours, and digestifs arrive at an unhurried pace, and the evening begins to close rather than end.
The pre dessert sorbet, often featuring ingredients like sea buckthorn, miyazaki mango, and saffron, refreshes the palate before the final sweet bites. The interplay of textures and flavors, such as simple pistachio and walnut, makes this part of the meal a memorable conclusion.
The Zén Singapore Set Menu: A Culinary Journey
Zén runs a set menu only, changing fully three to four times a year with the seasons. Lunch is S$450++ per guest and dinner is S$620++, with supplementary courses available.
Beverage pairings include options for non alcoholic and wine-based drink pairings, starting at S$180++ at lunch, while dinner pairings range from S$250++ for the non alcoholic pairing to S$350++ for the sake-and-wine pairing. Whatever the season, the menu is a carefully crafted combination of quality ingredients like foie gras, onion, almonds, tuna, and butter.
More Than a Meal: The Zén Singapore Experience
Service is a genuine strength. The team is warm and knowledgeable without ever hovering, and much of the finishing happens tableside, which keeps you connected to the cooking throughout.

Honestly, it depends on what you want from a night out.
Give it your evening if you enjoy tasting menus, appreciate immersive dining, and have an occasion worth marking. The acidity and fermentation running through the menu are deliberate choices, and they will not suit everyone.
